Hi, my name is Hajni (pronounced high-knee) I’m a Peterborough cake maker creating beautiful and
delicious bespoke cakes. I specialise in Swiss meringue buttercream and edible wafer paper decorations.
I make most things myself that go in my cakes including jam and caramel. I fill my cakes with Swiss meringue buttercream which is a meringue based buttercream as its name suggests. In texture it’s very light and smooth compared to traditional American buttercream.
I love expressing my artistic talent using sugar craft or wafer paper. And I’m proud to be one of the first cake makers in the area to offer wafer paper flowers as cake decorations. Wafer paper is a new form of cake decorating ingredient that can be turned into frills, ruffles, feathers, quilling, graceful flowers and many more. I especially like using wafer paper on my cakes because they are instantly distinguishable from sugar paste.
