It would be best if you always had someone you can contact and be responsible for looking after the arrangements.

Before you book any caterer, you must check if they are available on that date. Also, you might need to check how busy they are during that time. If it is their busy time of the year, it is always worth checking if they have enough staff to support it. You need also to check if they will serve all food on time and that there are no delays.
